Perfect for a summer lunch or dinner, these burritos are fresh and satisfying. The best is to prepare all the mixes and then each one take a tortilla and add whatever they wish. A fun anf delicious meal that all the family will love for sure!
Ingrédients
- Corn tortillas
- Lettuce leaves
- Coriander leaves

2 cups walnuts, soaked
overnight
- 2 tbsp soy sauce
- 1 tbsp ground cumin
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp sea salt
- 3/4 tsp chipotle or cayenne pepper (for kids, put only ¼ teaspoon)
- 1 tbsp extra-virgin olive oil
- ½ onion, diced
- 2 garlic cloves, minced
- 1 tsp chili powder or
- chipotle pepper
- 2/3 cup vegetable broth, more if needed
- 1 can (about 400 ml) black beans, drained and rinsed
- Sea salt and freshly ground pepper, to taste
- 2 tbsp fresh coriander, chopped

minutes, rinsed and drained
- ½ cup water
- 1 tsp apple cider vinegar
- 3 tsp lemon juice
- 1 tsp sea salt
- 1 tsp nutritional yeast
- Freshly ground pepper
- 2 cups cherry tomatoes, cut in 4
- 4 green onions, chopped
- ½ cup fresh cilantro
- 1 tsp extra-virgin olive oil
- 1 pinch sea salt
- Freshly ground pepper
- 1 small garlic clove
- 2 large ripe avocados
- 2 tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- 4 pinches sea salt
- Freshly ground pepper

Instructions
Prepare the walnut pâté
Mix all the ingredients in food processor. Season to taste and set aside.
Prepare the sautéed black beans
In a large skillet, heat the oil over medium heat. Add the diced onion and cook for about 3 minutes, until translucent. Add the garlic and chilli and cook for 1 more minute. Add vegetable broth and beans, and cook for about 5 minutes, until the beans are tender. Add more broth if necessary. Season to taste. Remove from heat and sprinkle with cilantro. Keep warm.
Prepare the sour cream with cashew nuts
In a blender, mix all the ingredients at maximum power, until the mixture is smooth and creamy. Set aside.
Prepare the salsa
In a small bowl, combine all ingredients. Set aside.
Prepare the guacamole
Finely grate the garlic. Put the avocado flesh into a bowl, add the garlic and the remaining ingredients. Mash with a fork and mix so as to keep some big chunks of avocado. Season to taste and set aside.
Assemble everything
Heat the tortillas in a pan to soften them. Place a fresh lettuce leaf in the center of the tortilla. Add the walnut pâté, black beans, guacamole, salsa, and sour cream. Garnish with fresh chopped coriander leaves. Roll them up and enjoy.
