There's nothing quite like a healthy and hearty salad brimming with vegetables, nuts, and crunchy grains, all dressed with a delicious vinaigrette. The mix of multicoloured vegetables and fruits in this salad are an easy, tasty, and nutritious way to make your plate look great. And it doesn't need to be time-consuming to prepare! Just cook the quinoa and the beets in advance, and then mix with the rest of the ingredients before serving.

½ cup frozen edamame

⅓ cup PRANA organic raw pecans

¼ cup PRANA organic raw European pumpkin seeds

1 large carrot

2 cooked beets

1 orange

2 cups fresh spinach or baby kale

1 tbsp olive oil

1 tbsp apple cider vinegar

1 tbsp Dijon mustard

½ tbsp maple syrup

Maple Dijon Vinaigrette
Instructions
Beet Salad
Pour 1 cup of water over quinoa in a saucepan. Bring to a boil, then set to low, cover, and simmer 10 minutes. After 10 minutes, turn off burner and leave covered to steam quinoa 10 minutes. Fluff with a fork and set aside.
Pour boiling water over edamame and let sit about five minutes. Drain and set aside.
Heat a small frying pan and add pecans and pumpkin seeds. Cook about 5 minutes or until golden (careful not to let burn). Set aside.
Grate carrot and cut beet into small cubes. Peel and supreme orange (i.e. remove all the peel and membrane from orange segments). In a salad bowl, combine all the ingredients except for orange and spinach.
Once vinaigrette is ready, mix spinach and oranges with quinoa mixture, then add vinaigrette.
Maple Dijon Vinaigrette
Prepare dressing by combining all the ingredients in a mason jar, closing tightly, then shaking vigorously. Adjust seasoning to taste.
