This alternative to regular pizza crust is healthy, delicious, and unique! It's also a marvellous gluten-free alternative. Cauliflower is really having a moment when it comes to vegan recipes, from "buffalo"-style cauliflower, cauliflower taboulé (its colour and texture make a great substitute for bulgur), General Tao-style cauliflower to this cauliflower pizza crust. It's got a unique texture, but it will still be well-received by lovers of a classic pizza crust, since it's crispy on the outside and soft at the centre. This crust has a very subtle flavour which perfectly complements whatever you choose to put on your pizza. The recipe is easy to make, all you need to do is make sure the cauliflower is ground quite fine before blanching it for several minutes (a step that's made even easier with the Prana milk bag!). The most taxing part of the process is making sure the cauliflower is well-drained so that the crust bakes up golden and crispy. The rest is child's play!

1 head cauliflower (24 oz/675 g or about 3 well-packed cups once ground)

3 tbsp PRANA organic ground chia seeds

6 tbsp water

½ cup PRANA organic raw European almonds, powdered

2 tbsp nutritional yeast

½ tsp salt

½ tsp your choice of dried herbs
Instructions
Preheat oven to 400°F (205°C).
Line a round or rectangular baking sheet with parchment paper.
In a bowl, mix ground chia and water in order to make a gel. Set aside.
Coarsely chop cauliflower and put florets in the bowl of a food processor. Mix to a semolina-type texture. Transfer into a bowl and microwave 3 minutes. (Alternatively, put cauliflower semolina in a PRANA nut milk bag, close and place in a saucepan of boiling water to cook 5 minutes. Transfer to a colander under cold running water to stop the cooking process, then press bag to get rid of excess water.)
In a large bowl, mix all the ingredients together and form into a large ball of dough.
Roll out dough onto baking sheet and bake 30 minutes. Gently remove crust from oven, add your preferred toppings, and bake an additional 10 minutes.
