Sweet Potato Latkes with Cashew Lime Sauce

Easy and savoury, these sweet potato latkes are the perfect accompaniment to a salad, or alone as a snack. With the complimentary cashew-lime sauce, you get a real explosion of complimentary flavours. This recipe was inspired by Yotham Ottolenghi's Plenty cookbook.
Ingredients

4 sweet potatoes

2 tsp soy sauce

3/4 cup spelt flour

1 tsp salt

3 green onions, chopped

1 tsp PRANA organic ground chia

1/2 tsp chili powder

Vegetable oil for cooking

1 cup PRANA organic non-roasted cashews, soaked (preferably)

1/2 cup water
-
2 tbs lime juice
-
1 tsp sea salt

Pepper to taste

Creamy Cashew-Lime Sauce

Preheat the oven to 400°F (205°C). Place the potatoes on a baking sheet and bake for 35 minutes. In the meantime, prepare the cashew-lime sauce.
Once cooked, scoop out the flesh and mix together in a large bowl with the remaining ingredients.
Form small patties and refrigerate for 15 minutes
In a non-stick pan, heat a large splash of vegetable oil and cook the latkes for 3-4 minutes on each side, until nice and golden. Then, place the latkes in the oven for 15 minutes at 350°F (180°C).
Creamy Cashew-Lime Sauce
Blend all ingredients together until smooth and creamy. Adjust seasoning to taste.
