Bright, fluffy and perfectly zesty, these Lemon Poppyseed Muffins are made with PRANA Gluten-Free Oat Flour for a soft texture and wholesome twist. Perfect for breakfast, snack time or an afternoon treat, they’re naturally sweetened and easy to make.
Ingredients

½ cup olive oil

½ cup almond milk

⅓ cup honey or maple syrup

3 eggs

1 cup PRANA Gluten-Free Oat Flour

⅓ cup poppyseeds
-
1 tbsp lemon zest
-
1 tsp baking powder
-
½ cup powdered sugar
-
1 tbsp almond milk
Optional glaze:
Directions
Preheat the oven to 350°F and line or lightly grease a ½ cup muffin tin.
In a medium mixing bowl, whisk together the olive oil, almond milk, honey or maple syrup, and eggs until smooth.
Add the PRANA Gluten-Free Oat Flour, poppy seeds, lemon zest and baking powder. Stir until just combined.
Divide the batter evenly between the muffin cups, filling each about 3/4 full.
Bake for 18–25 minutes, or until a toothpick inserted into the centre comes out clean.
Let the muffins cool in the pan for 10 minutes before transferring to a wire rack.
If using the glaze, whisk together the powdered sugar and almond milk in a small bowl until smooth. Drizzle over the cooled muffins and enjoy.
