A brunch classic with a crunchy twist! This vegan French toast is coated in spiced granola for a crispy outside and soft, fluffy inside. With bananas and chia seeds replacing eggs, it’s a healthy and delicious way to enjoy breakfast or brunch.

Ingredients

1 cup homemade minute almond milk

1 tbsp PRANA black chia seeds

1 banana, mashed

½ tsp vanilla extract

6–8 slices brioche bread

1 tbsp organic coconut oil or avocado oil

4 cups PRANA Maple Spice GranoLove (pulsed into crumbs)

Banana slices, fresh fruits and maple syrup for serving
Directions
In a bowl, whisk together almond milk, chia seeds, mashed banana and vanilla. Let sit for 10 minutes.
Pulse granola in a food processor for 10–15 seconds until finely ground. Set aside.
Dip each slice of brioche into the wet mixture, then coat with granola crumbs, pressing gently to cover both sides.
Heat oil in a pan over medium heat. Cook each slice 2–3 minutes per side, until golden and crispy.
Serve with banana slices, fresh fruit and a drizzle of maple syrup.
