Granola is a quick and easy way to start your morning and, if you choose the right ingredients, it can provide you with the nutrients and energy to help you get through your day. Our Machu Pichu granola combines Brazil nuts, almonds, European pumpkin seeds, white mulberries, goldenberries and goji berries with the power of rolled oats. This recipe is naturally sweetened with maple syrup and emits delicious aromas of coconut oil and fair trade spices.
Ingredients

5 cups rolled oats (not instant)

2 cups PRANA organic Machu Pichu exotic fruit & nut mix

2 tbsp PRANA organic fair trade ground Ceylon true cinnamon

1 tbsp ground ginger

1 tbsp vanilla extract
-
½ tsp PRANA unrefined Algarve sea salt

¼ cup PRANA organic coconut oil
-
¾ cup maple syrup
-
3 tbsp PRANA organic whole black chia seeds

½ cup PRANA organic chocolate chunks, 70% cacao
Directions
Preheat oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine oats, spices and sea salt. Set aside.
In a pot, heat coconut oil and, once melted, add maple syrup and vanilla. Remove from heat.
Pour the warm wet mixture over the dry ingredients and stir until oats are well coated.
Spread the mixture on the prepared baking sheet (should measure approximately 1" in thickness).
Place on the middle rack of preheated oven and bake for 10 minutes.
Remove from oven and add the Machu Pichu mix. Toss to combine and return baking sheet to oven for an additional 5 minutes.
Remove from oven and let cool completely.
Toss in chocolate chunks and chia seeds.
Store in an airtight glass container.
