There's no introduction necessary when it comes to chia pudding, a new spin on a classic that makes a great breakfast, dessert, or portable snack for school or the office! Start your day off right with this recipe, which has chia pudding swirled into a creamy avocado and matcha smoothie. It's full of antioxidants, fiber, and minerals. Not to mention, it's delicious! To make your mornings easier during the week, prepare a large batch of chia pudding, and split it between a few small mason jars - you'll have snacks for the week. Keep them in the refrigerator and they'll last for up to 5 days. All you'll need to do in the morning is make the smoothie and add it to the pudding!

1 small ripe avocado (or a banana)

1 pinch raw ground vanilla or ½ tsp vanilla extract

Directions
In a Mason jar, mix all the ingredients and shake vigorously. Let sit for several minutes before shaking again to distribute the chia seeds. Set aside for 30 minutes. The chia pudding can be prepared in the evening so it sets overnight. Will keep for several days in the refrigerator.
Chia Pudding
Put all the ingredients in a blender and mix until smooth and creamy.
Pour the chia pudding into a bowl, glass, or ramekin, then pour the avocado-matcha smoothie on top.
Garnish with berries.
