Tahini, a smooth paste made from crushed sesame seeds and water, is an indispensable ingredient when it comes to Middle Eastern cuisine. It can be found in most organic or Asian grocery stores. Sesame seeds are rich in minerals like calcium, zinc, and manganese. They also make a great source of B vitamins and protein. Sesame seeds and paste are both frequently used in Middle Eastern dishes, like hummus, baba ganoush, skewers, sauces, bread, halva, cakes and granola bars. In this recipe, tahini is made into a sauce that tastes great on both salads and grilled vegetables.

1 cup tahini (sesame paste)

7 tbsp water

4 tbsp lemon juice

1 tbsp extra virgin olive oil

1 clove garlic, minced

Sea salt and ground pepper
Instructions
Put tahini in a bowl. Add in water and mix with a whisk or spoon. At first, tahini will get a little sticky and be slow to absorb the water, but keep stirring until smooth.
Add in lemon juice, olive oil, minced garlic, and salt and pepper, then mix.
Recipe Note
The sauce will keep 4 to 5 days in the refrigerator. Add a little water as needed if the mixture appears too thick.
