Homemade Vegan Mayo with Turmeric

Making vegan mayonnaise at home doesn't have to be complicated - just keep this simple recipe on hand. It can be customized to your taste with the spices of your choice, some garlic or even fresh chopped herbs added just before serving.
Ingrédients

300 g silken tofu

1 tbsp apple cider vinegar

1 tsp maple syrup

1 clove garlic, minced

1/2 tsp sea salt

1 tsp Dijon mustard

3 tbsp olive oil

1/2 tsp organic fair trade ground turmeric
Instructions
Mix all the ingredients together except for the mustard, olive oil and turmeric.
Gradually add the mustard and the olive oil while whisking to make an emulsion. The mayo is ready when the texture is thick and creamy.
Add the turmeric and stir again.
Transfer to a small Mason jar.
Store in the refrigerator for up to 5 days.
