3 tbsp apple cider vinegar

8 slices of your favorite bread

2 ripe avocados

200 g cherry tomatoes

Instructions
Prepare the Ricotta: In a saucepan, gently heat the soy milk until just below boiling. Remove from heat, then immediately add the apple cider vinegar to curdle the milk. Stir briefly and let it sit for 5 minutes. Set a fine-mesh strainer over a bowl, lined with cheesecloth. Pour the mixture into the strainer. The curds will remain in the cloth, and the liquid (whey) will drain out. Let it sit until fully drained.
Whip the Ricotta: Transfer the soy ricotta to a bowl and whip it together with a pinch of salt and maple syrup until smooth and fluffy. Store it in the fridge for up to 5 days if you'd like to prepare it ahead.
Toast the Bread: While the ricotta chills, toast your slices of bread to golden perfection.
Assemble the Toasts: Spread a generous layer of the whipped ricotta on each slice of toast. Top with sliced avocados, halved cherry tomatoes, and a sprinkle of pumpkin seeds. Finish with a pinch of salt and freshly ground pepper to taste.
